Sankaranthi Kootu

A very special kootu, Sankaranthi kootu, is a great one to go along with pongal. Although, we never try to prepare this on any other days. Somehow, life moves like a flash, we also rush around things. This is yet another simple kootu,

Pongal is not a single day festival, it is a series of 3 days. The festival is also called as Harvest festival. The farmers worship Lord Indhra and Sun God for appropriate rain and abundant yield. So, these days helps for the family unity. Like that this kootu is prepared with lots of vegetables along with field beans and pray God for family unity.

You need:

Mixed vegetables - 3 cups (Pooshani, avarai, kathiri, Senai, sepankizhangu, vazhai)
Field bean shelled (Mochai) - 1/2 cup
Cooked toor dhal - 1/2 cup
Tamarind - half the lemon size
Sambhar powder - 1 tsp.
Green chillies - 2
Red chillies - 1
Turmeric powder - 1/4 tsp.
Mustard seeds - 1/4 tsp.
Urad dhal - 1 tsp.
Scraped coconut - 1/2 cup
Curry leaves - 2 sprigs
Hing
Salt - as per taste
Oil - 2 tablespoon

Boil sepankizhangu, Mochai and peel the skin for sepankizhangu. Cut all the vegetables into medium-sized cubes and cook it in a cup of water with salt. Slit green chillies.and add the green chillies, turmeric powder and hing to the cooking vegetables.
To this add the boiled saembu, and cook for about a min. To this add the cooked & mashed toor dhal and sambhar powder. Allow it to boil for a while. When slightly thick, add the scraped coconut, mix well.
Temper with Mustard seeds, Urad dhal, red chillies  and curry leaves. Season with tempered spices.

Serve hot for the pongal. Make sure you make more than the required quantity and reserve some for the Kanu.
