Bread Raita

It was a left over party at home, so I made Tawa pulao and Bread Raita. Since bread is all in all handy food in my pantry. I use them in most of the day today recipes. But have you heard of making it into a raita? Yes! next time you have left over bread in your house you can make bread raita. Do try this recipe. If you want whip this up in to an easy snack sprinkle some sev on it and enjoy.




Bread Raita

You need:

2 cups plain thick yogurt
3 slices of bread
1-2 green chillies, thinly sliced
salt to taste
1/2 tsp roasted cumin powder
few stalks of cilantro, chopped

Slice the ends of the bread. I like to have with the edges, if you do not like, you can take it anyway.
Cut them into cubes to make the croutons.

Spread them on a pan by spraying little oil over them. Make sure you add them on the pan when they are hot and not too hot. We do not want to burn the bread. You can even do this on a baking sheet and toast them. If you opt to bake, then bake at 350F oven for 5-10 minutes or until done.

In a mixing bowl, take a thick yogurt. Add the roasted cumin powder, chillies, salt and cilantro. Beat it well.

Just before serving the raita add the croutons. Adding it before hand will make the bread disintegrate in the raita. We want it soft and NOT mushy. If you like, garnish it with some more roasted cumin powder and chilli powder.

Serve it pulao or briyani of your choice.
