Nine Bean Soup

I love to have soups during winter days! A hot soup and a snuggle on the couch is what I ask for once a week.
Soups are easy to prepare, just little more time to cook. That's so easy for us, as not much hard work required. And you can bring the utmost fiber contents with a great flavor in one pot of soup, would say a yes or no?

I am preparing the nine bean soup for forth or fifth time, I guess! Not once the soup has deceived me in taste. I prepared the bean soup with my choice of beans to go with it. I always like to try to modify flavors and taste the same soup in different flavors. I have prepared the nine Bean soup in my style to suit my taste.
Nine Bean soup mentioned below can be prepared with basic spices (South Indian) at home.
This nine bean soup recipe is not only delicious, it is also super healthy. Packed with fiber from all those beans you will be doing your body good as you warm yourself up with this hearty recipe.

Nine Bean Soup

To make this recipe you will first need to create a bean mix, which should include one pound of each of the following:
1 pound navy beans
1 pound white lima beans
1 pound black beans
1 pound small kidney beans or Rajma
1 pound lentils
1 pound black eyed beans
1 pound Garbanzo Beans
1 pound Black channa
1 pound pigeon peas
In the above, you can include pinto beans as well.
You can prepare this bean mix, if you would use them regularly or else just take equal amounts of them and prepare the soup.
These are not only great for gifts also to keep on hand. When you plan them to give as gifts, be sure to include the recipe along.

You need:

Nine Bean Soup Mix - 1 Pound
Water - 2 qt
Mixed vegtables - 1 cup
Onions - 1 large chopped
Green chillies - 4 to 5 slit lengthwise

Chilli powder - 1/2 tsp
Coriander powder - 2 T
Sambar powder - 1T
Rasam powder - 1 1/2 T
Salt to taste

Onions - 1/4 finely chopped
Coriander leaves - 2 T finely chopped

Take 1 pound of the bean mix and soak overnight in water to cover.

Drain the water well and cook the beans with 2 qt water to tender. See to that they do not get mashed.
In a pan, add oil and saute cumin seeds then the chopped onions along with slit green chillies. Once onions are translucent, add mixed vegetables and saute for a while. Add little water and cook the veggies in low flame. Add salt and cook more. To this add the cooked Nine Beans along with the water. Add additional water if required.

To this, add the chilli powder, Coriander powder, Sambar powder, Rasam powder. Add more salt if required. Let this come to boil. Once it boils, keep in low flame and cook about 5 to 10 mins.
The Super Healthy Nine Bean soup is ready to serve.

Garnish with finely chopped onions and chopped coriander leaves.
