Sweet Potato Glow Spirals


Do you crave for Sweet potatoes? Then this is a yummy way to your dreamy Sweet potato rolls. The tender garlic with onion with the creamy hummus - infused bites of sweet potato deliciousness.

Spicy meets Sweet in this glowing spiral wrap.

Creamy garlic hummus, Cayenne and roasted red peppers. Rich in antioxidants like vitamin A, fiber, healthy fats and flavor! 

Perfect for a vitamin-A packed (lunchbox-perfect) lunch. Adding a creamy, savory hummus/sweet potato mash featuring Cayenne, garlic, roasted pepper and maple flavors.

Sweet Potato Glow Spirals

You need:
wraps (rectangle flat bread) - 2
olive oil (brush over wraps) - 2 tsp
shredded carrots - 1/3 cup
sweet onion, diced - 2 T shredded and sauteed
roasted red bell peppers, thinly sliced - 1/3 cup

Mash:
sweet potato, roasted and peeled - 1 medium
olive oil - 1 T
Garlic paste - 1 tsp
hummus - 1/2 cup
maple syrup - 1 T
apple cider vinegar - 1 T

red pepper flakes or dash of cayenne - 2 tsp
salt to taste
dash of fresh ground black pepper
Roast your sweet potato in the oven until sticky and caramelized. Also in the oven, warm your wrap. I brush one side with olive oil and wrap in a piece of foil. Heat for about 3 minutes - or until soft and pliable enough to roll. Set warm wrap aside.
(If you do on stove top, warm the wraps on the pan, as we do for rotis but this requires about a minute. Then brush with oil on one side. )
Wraps are great when you warm them in oven, as they do not become hard after some time.

Peel sweet potato. Add to small bowl and combine with "mash ingredients" - mash until a creamy mixture is reached. Taste and add more 'heat' as desired. Use either cayenne, hot sauce or red pepper flakes. I prefer the smoky flavor of Cayenne. Slice your red pepper and shred or julienne chop your carrots, along with sauteed onions.
Spread 1.2 cup of mash over your warmed wrap. Add your red peppers, onions and carrots.
Roll your wrap. Slice and serve!

Since, we had some great variety of snacks to go on for the evening, we had this for our dinner. I'm sure this is a delight for your kids too!
