Papad snacks are so tasty and very yummy to eat. I used to prepare the masala papads as starter. I love to prepare this papad roll with your kind of stuffing. For kids, you can fill with paneer masala or veggie masalas. I generally make the masalas with potatoes.
Papads with potato masala are light to have and goes on great with the Urad dhal papad. I made this as a starter for my son's birthday party. Everyone loved the starter, unfortunately there was only one for each. They are simple and easy to prepare on a everyday basis.
Masala Papad Rolls

You need:
Urad dhal papad with pepper - 12 no.s
Potatoes - 2 big cooked and mashed
Onion - 1 big finely chopped
green chillies - 4 finely chopped
ginger garlic paste - 1 tsp
cumin powder - 1/2 tsp
Coriander powder - 1/2 tsp
chilli powder - 1/4 tsp (increase to your taste, remember we already add green chilli)
chat masala - 1/2 tsp (optional)
garam masala - 1/2 tsp
curry leaves - few
coriander leaves - few
Salt to taste
Oil for deep frying
In a pan, add oil and tamper with mustard seeds. Now add the onions, and saute until it turns golden brown. Add the ginger garlic paste and saute until the rawness disappears. Now add the green chillies and other powders along with chopped curry leaves. Once they are mixed well, add the mashed potatoes. Make sure you do not add water.They have to really dry, so that you can keep them over the papads and roll. Finally, add the coriander leaves and set it aside.
Soak the papad in a wide bowl of water for not more than a minute. Gently rub the papad while inside the water. Take the papad and place it on a plate. Make sure you don't over lap the papads as they tend to stick.
Let the papad sit on the plate for couple of minutes. Place small amount of the potato masala on the papad and roll like your roti roll. Do this for all the papads. Heat oil in a shallow pan.
Once, the oil is hot add the papad slowly. Keep the masala side up, and slowly flip the papad. Make sure the papad fries til golden brown and not more than that.
Fry all the papads, and enjoy with ketchup or garlic sauce.
