Creamy Spinach - spiced up with golden corn

I first prepared creamy spinach on Hasini's 2nd birthday! This was a hit at the party in our house.
Spinach with butter and cream is always loved by the kids! And I prepare this for chapathi once in a while. This can also be had along with rice.





For the gravy
You need

Onion - 1big
Tomatoes - 2 medium or small
Turmeric powder - 1/4 tsp
Chilli powder - 2 -3 tsp
cumin & coriander powder - 1/2 tsp (together)
Ginger - 1/2 inch chopped finely
Garlic - 4 pods nicely minced
Creamy Spinach - 1 bowl
Butter - 2 tsp

Heat oil in a skillet. Add cumin seeds, saute and add the shredded onions. Saute it for about 2 mins or until tender. Then add the ginger & garlic and saute for 2-3 mins. Now to this add up the tomatoes and saute until oil separates from the mixture. While cooking the tomatoes add up the dry powders, mix well and saute for about 2 mins.
Now add the corn and cook for about 2 mins. Then to this add the creamed spinach. Let this cook until it becomes a thick gravy. Add 2 tsp butter and cook for about 2 mins and it is ready to be served.


You need:
For Creamy Spinach
clean fresh spinach, roughly chopped - 3 bags
Heavy cream - 1 1/4 cup
Butter - 1/4 cup
White onion chopped - 3 tablespoons
Provolone cheese - 4 slices
Salt to taste

Heat a skillet over medium-high heat. Add spinach and cook until wilted, stirring constantly. Remove from the skillet and drain in a colander. Try to squeeze out as much liquid as possible.
Melt the butter in the skillet over medium heat. Add onions, cook for 3-5 mins or until tender. Add the spinach and stir in the heavy cream. Sprinkle in the provolone cheese and stir to melt and coat the spinach. Once the provolone has melted, continue to cook and stir until thickened. Season with salt.

All kids love to eat cheese in some form or other. And I wonder if any kid likes spinach! Well, I have not seen anyone till now. Green is just liked as a mere color but not in veggies by many. I think this greenly curry will be loved by anybody at home.
