Mint raita

I always want some change from the routine things. When we want it for the main courses, why not for the raita? Instead of the regular raitas, the mint raita is great with any kind of pulao. Pulaos have a mild flavor of the spices, so the mint raita pairs well with them. And we both are mint lovers. We like mint in all forms, body coolant, mint pulao, mint chutney, and now mint raita.

 
You need:
fresh mint leaves - 1 cup with 1 tsp coriander leaves
Coconut - 1tsp
lime juice - 1/2 tsp
salt to taste
Yogurt - 1 cup husked
Roasted cumin powder - 1 tsp plus to garnish
Spring onions - 2 sliced

Grind the mint leaves, coconut, lime juice, and salt to a paste. To the yogurt add the ground paste.
Add the roasted cumin, salt, onions (replace with shallots also). Mix well and refrigerate. Remove and serve with your favorite pulao.
