Lettuce Cups

A 30 min ready to eat salad. Most of the salads are healthy if you are using natural food. But do they taste great which will make you to eat next time.
This is very light salad for dinner. The original recipe called for chicken, which I have replaced with cooked and diced potatoes.
Lets peek into the recipe



You need:
Cooked and diced potatoes - 1/2 cup
Freshly ground pepper - 1/4 tsp
salt - 1/4 tsp
vertically sliced red onion - 1 cup
diced tomatoes - 1/4 cup
chopped fresh oregano - 1 T
chopped fresh parsley - 1T
pitted olives - 10
diced fresh mozzarella cheese - 1/2 cup
fresh lemon juice - 1 tsp
Bibb or Boston lettuce leaves - 4
Granola oats - 1 cup(optional)

Heat a large nonstick skillet over medium high heat with little oil. Add the potatoes, pepper and salt to pan. Cook for about 3 mins stirring to crumble. Stir in onion and next 4 ingredients (through olives). Cook until potatoes are done.
Stir in cheese and juice. Add the granola on each and spoon 1/4 cup of this mixture into each leaf and serve.

You can also add some cooked pasta (seasoned) to this.
