Slowly the sun peeps in the windows and makes and creates a warm climate. I always find hard to wake from my bed whether it is summer or winter. But who wants to miss even a tiny bit of summer. Of-course, not I love to play outside with my kids or with my SH. It is fun in the sun.
I always like to make my foods and recipes season specific at my place. We have soups in winter time and salads in summer. Also insist on low calorie food in winter. I came across this guacamole soup. I am so nuts about Avocado and anything about it. So wanted to try it out and we loved it. My daughter do not like plain avocados, so I made like with less spice for her and more cheesy. You would surely like it, if you are a lover of avocados like us.
Chilled Guacamole Soup

You need
2 ½ cups low-sodium vegetable broth, divided
2 avocados, peeled and pitted
2 cloves garlic, coarsely chopped
1 jalapeno, seeded and coarsely chopped
¼ cup red onion, chopped
1 tbsp lime juice
1 tbsp fresh cilantro, chopped
1/2 tsp salt
¼ tsp pepper
¼ tsp cayenne
¼ cup whipping cream
2 tbsp sour cream
6 tbsp cheddar cheese, shredded (If you are veg., then look for organic cheddar)
In a food processor combine 1 cup of chicken broth with avocados, garlic, jalapeno, lime juice and cilantro. Puree until smooth. Add remaining 1 ½ cups broth, salt, pepper and cayenne and blend. Transfer mixture to a large bowl and stir in whipping cream. Cover and chill for at least 1 hour and up to 12 hours.
Divide soup among 6 bowls. In the center of each bowl, dollop 1 tsp (5 mL) of sour cream. Sprinkle each with 1 tbsp shredded cheese.
(You can avoid sprinkling onions while serve and choose other options like Jalapenos, or Parsley or just shredded cheese to give some variations. If you want it little sweet, avoid Jalapenos, and try Mango pulp. )
