Palak Paneer

After a long time, I am able to sit with my blog. When I think to have some time for myself in the morning, well then postpone to evening then again change to post dinner. Some how I never find time for myself.  Hardly have some time to sit with my blog.I have been busy with my little hero's birthday party and his Ayushhomam. Everything went on very grand and nicely. Of all the guests my son enjoyed his time during the function.

The little master was introduced to all new kinda foods and he enjoyed the most was the chocolate cake and nutella. So soon, you can see more recipe using nutella :)

Lets hop into our recipe for palak paneer,

Palak Paneer

You need:
1 bag Spinach
7 oz - Paneer
3 tbsp - Oil
2 medium - Onions
1 tsp - Ginger paste
2 tsp - Garlic paste
1/2 cup - Water
2 large - Tomatoes
2 tsp - Garam Masala
1 tsp - Cumin Powder
2 tsp - Coriander Powder
1/4 tsp - Turmeric Powder
1/4 cup - Heavy Whipping Cream (can replace with soy milk or Almond milk)
Red Chili Powder – to taste
Salt - to taste
Milk – to taste (optional)

Wash the Spinach well, and nicely. It is always better to wash the spinach before chopping or grinding. Now,  blend it with mixer. Once blended, cook with 1/2 to 1 cup water. Cook the spinach open, (it is not healthy to cook spinach closed. Blend cooked Spinach to desired texture, do not make lie paste. Heat 2 tbsp Oil in a medium kadai on high heat. Once Oil is hot, add in the sliced Onions, stir, cover and let it cook for about 5 minutes. Add in the Ginger and Garlic and mix. Cook for another 4-5 minutes. Add in the Tomatoes, cover and cook till the oil separates from the mixture.

Keep stirring frequently as the Masala (Onion, Tomato, Ginger & Garlic mixture) tends to burn very fast.  While the Masala is cooking, cube the paneer to desired size…1/2″ cubes work well. In a non-stick frying pan, heat the remaining 1 tbsp Oil.

Once Oil is hot, add in the paneer cubes and let them cook till they are golden brown on all sides. Remove from the pan into a plate with paper towel to soak the excess oil. Then, pour the Paneer into a bowl of cold water. Let it sit for 5 minutes.

Once the Masala is prepared, add in the mashed Spinach. Mix and add the Garam Masala, Cumin Powder, Coriander Powder, Salt, Chili Powder & Turmeric Powder. Mix well and cook for 3-5 minutes. Add in the desired amount of Cream and /or Milk. Mix and cook for another few minutes. Gently squeeze the water out of the Paneer and put the Paneer in the Spinach. Mix gently and serve hot. Enjoy with Naan, Chapati, Paratha or Rice.

When I prepare on a regular basis, I do not add heavy whipping cream, rather add little whole milk. There's a huge difference but it doesnt matter when compared to the fat content. Just reduce as much as I can. :)
