Paal Kozhakattai

Paal Kozhakattai is a traditional sweet recipe of Tamilnadu. It is easily prepared and quite different ways to prepare depending on our taste and time limits. We can prepare using normal milk or using coconut milk. Well, I like to use both, as I do want the flavor of coconut milk to be there. But am lazy to take lot of coconut milk. SO I mix them and it tastes great! It is not too sweet, so anyone who are quite conscious on their sweet intake can try this out.
This would be a different healthy dessert for the kids too!



You need:

Milk - 2 cups
Sugar - 1/2 cup (adjust to your sweetness, this will be mild)
Raw rice - 1 cup
Coconut milk - 1/2 cup
Saffron a pink
Cardamom powder - 1 tsp

Soak the rice in water for 30 mins. Grind the rice in mixer to a fine paste.
  Take the ground flour in a heavy bottomed pan, and keep in low flame and stir continuously. The ground flour will slowly become thick in consistency like the chapati dough.

This is the correct consistency and switch off the flame.


Make very small balls out of the rice dough as shown here. Around 40 balls will come in 1 cup of rice.

Add 2 cups of water and add the rice balls. Let it get cooked completely. Or you can also try our usual cooking method in idli pan.We can add milk instead of water, as it takes long time to cook in milk. I prefer to have it cooked in water. I'm little lazy, your are right!

Add the milk, and cardamom powder to the cooked rice balls and let it thicken. When the milk consistency reduces a bit, then add the coconut milk and cook until it boils. The milk reduction depends on our taste. You can reduce to half the consistency or just have it till you boil the milk. I made it slightly lesser than what I added. Well, laziness peeps here too ;).

Or you can use completely coconut milk. Just to suite our taste buds.

To this add sugar or jaggery. Add some saffron threads and set it aside for some time.
